Recently, the internet’s been abuzz about the Hasselback Potatoes. This is a type of potato dish, which was introduced in the 1940s in Sweden. The name is derived from the restaurant where they were first introduced, which was called Hasselbacken. This is a simple dish, which is nothing more than whole potatoes cut in such a way as to resemble an accordion when roasted. So, the inside of the potato is creamy, while the outside becomes crispy.



However, the Hasselback approach isn’t only limited to potatoes. Instead, other dishes are prepared with this method, such as apples and chicken. Therefore, we decided to present you one of the most delicious chicken recipes. Although the chicken can be stuffed with practically anything, we opted for a healthier alternative, which includes the amazing spinach.

Easy-Cheesy Hasselback Chicken

Ingredients:



1 teaspoon olive oil
1 ½ cups fresh baby spinach
¼ cup ricotta cheese
1-pound chicken breasts
⅛ cup white grated cheddar cheese
Paprika
Salt
Pepper
Instructions:

First, preheat the oven at 400 degrees Fahrenheit (200 degrees Celsius or Gas Mark 6). Then, take a sauté pan and add some olive oil and cook the spinach 3 to 5 minutes. Next, add the ricotta and cook for a minute. Then, leave it to cool. Cut slits into the chicken breasts, about 1 centimeter apart. You should stuff all of the spinach and ricotta mixture into the cuts. Then, season the chicken with some salt and pepper, and sprinkle white cheddar cheese and red paprika on top. Bake for 20-25 minutes, until the cheese, is melted.
